Another band and person that cover other people’s material very well and I have found enjoyable are Apocalyptica and not for everybody’s taste but David Garrett does metal covers with equal prowess for being a violinist.

To me, K.D. Lang does it better than anyone but it's not rock or metal by any means so I won't link. There's a number of clips of her doing it on youtube if anyone wants to go look. When she performed it at the opening ceremonies of the 2010 Winter Olympics here in Vancouver I think she made the entire world shed a tear or two
