Nightwish have been on the boat before (I think 2012?) and their tour dates show a fine gap during the cruise.
Symphony X are in my opinion not "too big", I remember Slayer on BTH, so probably no one's really too big. Ok, Metallica would be...they'd need their own boat for Lars' ego...so...ruled out!

Nightwish did indeed play 2012
Symphony X are certainly not too big as they already played 70k 2014.
Slayer playing Barge to Hell? Sorry, never happened. Slayer recently played Motorboat with Anthrax and Exodus, so I would say those bands along with Testament who played Motorboat the year before are probably too big.
As far as all of you requesting Metal Church...they're already playing the Monsters of Rock cruise a few weeks after our cruise, so that's probably not going to happen this year.
